Zach's 7th Birthday

The Absent Minded Chef strikes again. My kitchen is a disaster! I am boldly trying to make a 3 dimensional Ghost cake with marshmallow fondant. Normally this would be easy. Just follow the recipe and go from there. However, my son has Eosinophilic Gastroenteritis. A condition that causes his body to react to almost all food proteins. So, I must substitute. At 1pm, I have been trying to make the cake for 3 hours. The first time, I followed a coconut flour specific recipe that called for 12 eggs...i substituted with gelatin. I'd give you the amounts, only I don't know them (hence the absent mindedness). I just sort of wing it. Anyway, it didn't turn out...just a gelatinous blob, which goes with the Halloween theme and is entirely edible, just not worthy of displaying for 18 picky 6/7 year olds. So, enter Better Homes and Gardens recipe for Devils food cake...this time, I substituted 1c. corn starch, 3/4 c coconut flour & 1/2 c almond flour for the flour and 1 packet gelatin +2 t. cherry jello powder. Its baked 35 mins so far, but looks better than the last attempt. Once I have a recipe narrowed down, I will post it so I can access it later...
